This is proven by the fact that scotch whisky is within the top five export earners and makes a considerable profit while making very large contributions to Britain’s foreign exchange.</p>
<p> Approximately 200 markets are in the exchange for Scotch whisky with the European Union being in the forefront vying for top spot with the United States, Japan and other Asian markets following suit. The European Union is accountable for at least 50% of all Scotch whisky sales with the other countries rounding up another 40% or so.</p>
<p> A nine-year sales projection is in reserve of scotch stock maturing or already matured. In 1996 the stock of matured scotch was sitting at 2,741 million liters up a tenfold from 1945 at 247 million liters. The stock was higher in 1939 at 374 million liters. <p>Firstly you will need a pizza base which can be brought in supermarkets or alternatively you can make the pizza dough yourself.</p>
<p>You will require the following ingredients for a twelve inch pizza –</p>
<p>2 ¼ tea spoons active dry yeast</p>
<p>1 1/3 cups of water</p>
<p>2 tablespoons of olive oil</p>
<p>3 ½ cups of all purpose flour</p>
<p>Pinch of salt</p>
<p><strong>Creating The Pizza Dough</strong></p>
<p>Once you have all these ingredients, get a large mixing bowl and pour the water into it, then dissolve the yeast and leave to stand for 5 minutes. You can then blend in all the above ingredients, either with a mixer or by hand. You are now ready to knead the dough for approximately 10 minutes until the dough becomes elastic and smooth.</p>
<p>Coat a separate bowl with the olive oil and place the dough inside. Cover the bowl and leave for about an hour until the dough rises to double its volume. It is now ready for baking.</p>

<p>Firstly cover the dough with a tomatoe puree or sauce or you can use chopped tomatoes if preferred. Now it’s time to choose your toppings. Mix and match your ingredients to create a taste that is right for you.</p>

<p>I love Italian food! It will always hold a special place in my heart and stomach. I really like finding a traditional recipe that has a new creative twist to it. One dish I found and has quickly become a family favorite is Crispy Volpi Pancetta Spinach and Ricotta Cannelloni with Marinara Sauce recipe. This <strong>cannelloni recipe</strong> is unique and fun to prepare. This recipe was on Chef Michael&#8217;s blog page at &#8220;volpifoods.com”. You’ll love how the textures and flavors combine to create an Italian masterpiece!</p>
<p> </p>
<p>Ingredients:</p>
<p><strong>Cannelloni Pasta Dough Recipe</strong></p>
<p>1 T - Extra Virgin Olive Oil</p>
<p>2 each - Extra Large Eggs</p>
<p>1/8 t - Sea Salt (fine)</p>
<p>1 c – All Purpose Flour</p>
<p>½ c - Semolina Flour</p>
<p> </p>
<p>In the bowl of your stand mixer place the eggs, olive oil and sea salt. Mix on low speed until well blended. Combine the flour and semolina in a small bowl and blend well. Set the mixer on low speed and add the flour to the wet ingredients.</p>
<p> </p>
<p>Remove the dough from the mixer bowl and shape into a ball. On a lightly floured surface, knead dough until the texture is smooth. Flatten pasta dough to 2 inch thickness and wrap with plastic wrap – allow resting for minimum 30 minutes. Once the pasta dough has had enough time to rest, next step is to make the sheets for the cannelloni.</p>
<p> </p>
<p>A rolling pin can be used; however one of the BEST kitchen tools to have is a traditional hand crank pasta machine. Slice the dough in 4 equal pieces. Beginning at the widest setting, begin to roll out the pasta dough until the desired thickness is achieved. Use a pasta sheet that is approximatrly 3 1/2 x 22 inches. NOTE: Roll out all pasta before adding cannelloni filling. Keep the dough covered with a towel or plastic wrap to prevent the pasts from getting too dry.</p>
<p> </p>
<p><strong>Cannelloni Ingredients</strong>:</p>
<p>1 lb - Spinach, leaves only - fresh (blanched, finely chopped)</p>
<p>1 ½ lb - Ricotta cheese</p>
<p>Chef Note* - Visit Volpi web site ‘Recipes’ for “Home-made Ricotta”</p>
<p>1 ea - Egg, large and 1 additional egg for egg-wash</p>
<p>2 T - Heavy Cream</p>
<p>¼ t - Nutmeg, fresh ground</p>
<p>¼ t - Lemon zest, fresh zest</p>
<p>1/3 c - Parmesan cheese, fresh grated, additional for garnish</p>
<p>Sea Salt, Black Pepper (fresh ground)</p>
<p>1 bunch - Basil, fresh sliced in ribbons</p>
<p>12 oz - Volpi Pancetta, cut in ½ x ½ strips</p>
<p>1 T - Olive Oil</p>
<p>5 c - Marinara / Tomato Sauce</p>
<p> </p>
<p><strong>Method:</strong></p>
<p>Bring large pot of water to boil. Season with sea salt and start to blanch spinach by placing in boiling water for 30 seconds. Take spinach out and shock in ice cold water, draink well and squeeze to remove excess water. Chop very fine. (NOTE* Frozen spinach is quick, acceptable substitute)</p>
<p> </p>
<p>In large mixing bowl place Ricotta cheese and add egg, heavy cream, nutmeg, and lemon zest. Mix ingredients well to incorporate. Fold in spinach and Parmesan cheese. Use sea salt and black pepper to adjust seasoning. Move this to the side until you are ready to assemble the cannelloni.</p>
<p> </p>
<p>Chef Tip: Fill a pastry bag with Spinach &amp; Ricotta filling; this makes the cannelloni making process quick, easy and with little mess.</p>
<p> </p>
<p><strong>Volpi Pancetta ½ by ½ inch strips:</strong></p>
<p>Place 1 T olive oil in sauté pan over medium low heat. Add in Volpi Pancetta and be sure to render the meat until it becomes crispy and golden brown on both sides. Remove from pan with slotted spoon and place on plate lined with paper to drain and hold.</p>
<p> </p>
<p><strong>Assembly:</strong></p>
<p>Place one of the rolled pasta sheets on flat surface on top of a piece of plastic wrap in front of you. Using the pastry bag method, squeeze a ¾ inch bead of filling at bottom edge of pasta sheet. Put a thin coating of egg wash on top edge of cannelloni to help seal. Next, grab the plastic wrap, lift up and roll pasta sheet over to create the cylinder shape. Once you have the cannelloni shape, cut cannelloni into 5 1/2 inch pieces. Move cannelloni to parchment lined sheet pan and be sure to refrigerate until ready to cook.</p>
<p> </p>
<p><strong>Cooking:</strong></p>
<p>Place a layer of tomato sauce on the bottom of a baking dish, approximately ¼ inch thick. In an even row, lay the finished cannelloni on top of the sauce. Cover baking dish with both plastic wrap and then aluminum foil. Place cannelloni in the oven at 350 degrees F for 10-15 minutes.</p>
<p> </p>
<p>Place remaining marinara sauce in pot and heat to simmer and hold until plating.</p>
<p> </p>
<p>Remove from oven, place cannelloni on plate or serving platter. Spoon marinara sauce on top, sprinkle on fresh basil, Parmesan cheese and Volpi Pancetta strips.</p>
<p> </p>
<p>Serves 4-6 people.</p>
<p>Chef Michael’s <strong>spinach pasta</strong> recipe is truly a wonderful rendition of traditional cannelloni. Adding Pancetta as a garnish was inventive and complemented the meal nicely. You will have to try it and taste for yourself! A sangiovese or merlot will complement the meal nicely.</p>

			<content:encoded><![CDATA[<p>We go to a local coffee house and we order cappuccinos, caf?mochas, lattes and espressos.It isn&#39;t the paper cups that make these drinks taste so good.  It&#39;s the recipe and of course the prettiness factor.  Baristas all have a style of their own and every cup will taste different because of the roast, the grind, the amount used, the water, the temperature and many other things.  We have all tried to make these coffee delights at home the way we think they are made, but do we really know the real way they are supposed to be made to extract the enchanting flavors correctly?Here is a quick list of how to make the basic drinks.This is boot camp for coffee drinkers.Cappuccino:  Equal parts of steamed and frothed milk and espresso. The milk goes on top of the espresso. Dust with nutmeg, cinnamon or chocolate powder or shavings.Caf?Mochas: The easiest way is to use a good brand of hot chocolate, throw in a shot of espresso and top with whipping cream and chocolate powder or shavings.  It looks the best if you put it in a tall glass and use a long handled spoon.For a finishing touch add a saucer and a napkin.  Or make a latte and toss in a chocolate flavored shot.Lattes:  Foam &amp; steam milk to 140-degrees.  The ratio is 50&#37; espresso and 50&#37; milk.</p>
<p> Pour the milk down the side of the cup so it infuses with the espresso.  The difference between this and a cappuccino is a latte blends the two things together, whereas the cappuccino keeps them separate.Espressos:  We&#8217;ve all had bad espresso.There are many reasons why this is.The number one reason is an unfavorable bean.  If you like espresso you are likely a connoisseur of coffee and know what constitutes a good bean.  Anyway, to make a good espresso you must do the following: Use a fine grind You must tamp the espresso down firmly You must use a high pressure machine or stove top model You must not try to make too much at once You must see the creama on the top, which is a golden&#45;brown foam You must use an appropriate espresso cup to keep the temperature from dissipating too quickly All in all, making coffee correctly is all up to you and the way your flavor buds react to the taste.  If you like it a particular way, then make it that particular way.  However, if you have guests over they may just like the basics.  So do yourself a favor and learn the correct way to make lattes and espressos.</p>

The Blue Mountains are named for the blue mist that hovers over the mountains at all times. Located on the beautiful island of Jamaica, these mountains offer the perfect climate for growing fantastic coffee beans. This lush, tropical region benefits from plenty of rainfall, giving the soil the rich quality needed for growing the gourmet Blue Mountain coffee. The beautiful Blue Mountains stand at almost 7,500 feet above the sea and make a stunning backdrop for the pristine white beaches These mountains house over 194,000 acres which are protected as part of the rain forests. There are many different species of birds and plants which can only be found in these mountains.</p>
<p> Blue Mountain coffee beans were originally brought to the Jamaican Islands by Sir Nicholas Lawes who hoped the climate would prove productive for these special beans. Since 1728 these beans have continued to produce extremely well and today coffee is the biggest export of these islands. Blue Mountain coffee is one of the most sought after coffees in the world and Japan imports a large part of this coffee.</p>
<p> Blue Mountain coffee is closely monitored by local Jamaican officials to insure the supreme quality associated with its name. These officials grade the quality of the coffee bean before they place it in specific categories. There is close regulation with strict rules which must be met before the coffee bean is offered for sale.</p>
<p> Recent climate changes have posed a threat to Jamaica;s most precious resource. Hurricane Ivan posed a real threat to not only the coffee industry, but the islands themselves. Ivan is just one of a long line of hurricanes which have threatened the islands over the span of only a few years. In 1988 Hurricane Gilbert caused considerable damage to the coffee crop which resulted in a drastic price increase. Each time the island sustains a hit it takes longer for them to rebound which in turn makes the Blue Mountain coffee almost as precious as gold.</p>
